My favorite rice cakes' brands are Lundberg and Quaker. I like brown rice or multigrain cakes for some extra fiber. Place cottage cheese on the rice cake and spread evenly using the back of a spoon.
Top them with avocado and a sprinkle of crushed red pepper, if you're feeling a little spicy. Throw some seaweed, avocado, cucumber and shrimp on a Lightly Salted rice cake.
